1 1/2 tablespoons of butter or oil
3 medium-sized potatoes, peeled and cut into thin slices
salt and pepper to taste
1/2 cup of finely chopped onion
1/2 cup of chopped green pepper
1 can of ham or viandada, cut into strips
3 eggs
1/2 cup of grated strong cheese
1 1/2 tablespoons of butter or oil
3 medium-sized potatoes, peeled and cut into thin slices

Melt the butter in a 25 cm diameter pan
Lay out half of the potato slices at the bottom
Sprinkle with salt and pepper, then cover with half of the onion, followed by half of the green pepper, and season again
Place half of the ham on top
Repeat the layers of vegetables, reserving the remaining ham
Cover the pan and cook slowly for about 20 minutes, or until the potatoes are cooked
Break the eggs into a bowl and whisk lightly with a fork
Pour over the potatoes, distributing evenly
Place the remaining ham in decorative form
Cover again and cook until the eggs are set, about 10 minutes
Dust with cheese
Cover until the cheese starts to melt, about 2 minutes
To serve, cut into slices, about 4 or 5 portions.
