4 liters of water
6 sprigs of parsley
3 leaves of bay
1 tablespoon of salt
30 large cod fillets, cleaned and with heads (1,200g)
1 1/4 cup olive oil
5 cloves of garlic
1/2 cup all-purpose flour
8 tablespoons sweet paprika
to taste: salt and black pepper
4 tablespoons chopped parsley

In a large pot, bring the water to a boil with the sprigs of parsley, leaves of bay, and salt
Cover the pot and let it simmer for 10 minutes
Increase the heat and add the cod
Let it cook for 1 minute
Remove the cod using an slotted spoon
Reserve the liquid and set it aside
Heat the olive oil in a large skillet over medium heat
Add the garlic cloves and sauté until they're golden brown, stirring occasionally, for about 4 minutes
Lower the heat and add the flour, paprika, salt, and black pepper
Mix well and cook for an additional 2 minutes, stirring frequently
Gradually add 7 cups of the reserved liquid to the skillet, mixing vigorously
Increase the heat again and bring it to a boil, then reduce the heat and let it simmer for about 3 minutes
Add the cod fillets, lower the heat, and let it simmer gently
Check the seasoning
Serve on a platter and garnish with parsley
Serve hot
