1/2 cup of cornflake crumbs

one tablespoon of salt
1 1/2 cups of milk or broth
three eggs, separated
two cups of ground poultry, chicken, duck, or turkey
one tablespoon of lemon juice
green herbs, red or green pepper flakes

Melt the fat, add the flour, mixing well, then add the cayenne pepper, salt, and paprika
Add the milk and cook until thickened, stirring constantly
Add the crumbs, beaten eggs, ground poultry, and lemon juice
Let it cool
Combine the remaining egg whites with seasonings
Pour into a greased mold or individual molds
Place in a water bath and bake in a moderate oven for 20 to 35 minutes or until firm
Serve with white sauce or mushroom gravy
For variety, sautéed mushrooms can be added to the mixture before cooking
