1 small peeled and thinly sliced sweet potato

4 sausage slices

2 tablespoons of milk

Sauté the onion and sweet potato in a frying pan with 2 tablespoons of butter until they're tender
Gently break up the sweet potato with a spoon and add the sausage and remaining butter (1 tablespoon)
In a medium-sized bowl, beat the eggs with milk and salt
Pour the mixture over the sweet potato mixture in the frying pan
Cook over low heat, lifting the edges to allow the egg mixture to flow underneath the omelette
Continue cooking until the omelette is firm but still creamy
Serve the fritter immediately, cut into 4 portions.
