8 small fish fillets (lingcod, pescada, catfish, etc.)
Enough water to cover
Salt and pepper to taste
1/4 cup butter
1/4 cup all-purpose flour
1 cup milk
1 cup heavy cream
3/4 cup grated cheddar cheese
Parmesan cheese, grated
Season the fish with salt and pepper and cook slowly in enough water to cover it, without adding too much, until the fish is tender
Remove the fish from the cooking liquid and keep warm
In a saucepan, melt the butter, add the flour, and mix well until all the ingredients are well combined
Meanwhile, let the milk come to a boil with the cream and add everything to the flour and butter mixture at once, stirring vigorously until the sauce has thickened and is smooth
Remove the sauce from the heat and let it cool for a minute
Add the grated cheddar cheese and check the seasoning
Pour the sauce over the fish and sprinkle with Parmesan cheese
Put it in the oven just to give it a nice golden brown.
