1 tablespoon of grated lime zest
4 tablespoons of chopped parsley
1 teaspoon of salt
1 cup of milk (240ml)
1/4 cup of all-purpose flour (30g)
3 tablespoons of melted butter

1 large tomato (170g) diced
1 medium onion (100g) diced
1 teaspoon of paprika for dusting

Preheat the oven to 400°F (200°C)
In a large bowl, season the fillets with lime zest, parsley, and salt
Arrange them side by side in a 9x13 inch baking dish
Set aside
In a small bowl, whisk together milk, flour, melted butter, and eggs
Pour over the cod fillets, cover with diced tomato and onion, and dust with paprika
Bake at 400°F (200°C) for about 20 minutes, or until the fish flakes apart when tested with a fork
Serve hot in the same baking dish
