Blend the remaining ingredients in a processor or blender, except for the olive oil
Set aside
In a large skillet, heat the olive oil over high heat
Add the blended mixture and reduce the heat to low
Simmer, stirring occasionally, for 3 minutes
Add the fish fillets, turning them to absorb the flavors on both sides
Cover the skillet and cook over low heat, stirring occasionally, until the fish flakes easily with a fork (about 15 minutes)
