Dissolve the butter in a bain-marie, then add the flour, mixing well, along with the pepper, salt, and paprika
Gradually add the milk and cream, stirring constantly until thickened
Beat well
Add the cooked chicken and pimentos
Cook for 15 minutes and serve over toast or in small savory frittatas
Two alternative variations:
-Add 1 tablespoon of sherry
-Omit the pimentos and add 1/2 cup of sautéed mushrooms and 1 tablespoon of chopped green pepper
