1 kg of codfish
1 large pumpkin (2.8 kg)
1 large onion, cut into fine rings
4 cloves of garlic, minced
1 bell pepper, crushed
Salt to taste

Soak the codfish in water for 48 hours, changing the water at least four times during that period
Rinse under running water, remove the skin and bones, and cut into 2.5 cm pieces
Preheat the oven to high temperature
Cut off the top of the pumpkin, forming a lid, and discard the seeds
Wrap the pumpkin in aluminum foil and bake for 1 hour and 15 minutes
Remove from the oven and keep warm
Remove the pulp of the pumpkin, leaving a 1.5 cm border, and mash it
Sauté the onion, garlic, butter, and 1 tablespoon of olive oil over low heat
Add the pulp and salt, mix well, and let simmer
Cook the codfish, lemon juice, half the cilantro, bell pepper, remaining olive oil, and salt in medium heat, stirring occasionally, for 10 minutes
Mix the purée
Stuff the pumpkin and bake for 20 minutes
Sprinkle with the remaining cilantro and serve
