6 cloves of garlic

1 cup of oil
1/4 teaspoon of cold water
1 tablespoon of lemon juice

Mash the garlic and salt together in a mortar
Add 1/4 cup of oil, drop by drop, stirring constantly
Continue adding the remaining oil slowly, alternating with some drops of cold water if the sauce thickens too much
When all the ingredients have been added, stir in the lemon juice
Store in the refrigerator, in a hermetically sealed container
This sauce can be served with fish and seafood
Yield about 3/4 cup.
