3 tablespoons of heavy cream (optional)

Melt 2 tablespoons of butter, but don't let it brown
Add the cognac and let it simmer slowly
Add the beef broth and let it simmer over low heat for a few minutes
Add the remaining butter in small increments; stir well
Keep warm
If desired, add heavy cream at the end.
