2 pounds of cooked and shredded chicken breast
1/2 cup of mayonnaise
1/2 teaspoon of mustard
1 tablespoon of curry powder
1/2 cup of chopped fresh cilantro, arranged in a quarter cup
1 tablespoon of lemon juice
Salt and black pepper to taste
16 slices of white bread, cut into quarters
1/3 cup of lightly toasted and chopped or shelled pecans

In a bowl, combine the chicken, mayonnaise, mustard, curry powder, cilantro, lemon juice, and season to taste
Spread 1 tablespoon of this mixture onto each of the 64 quarter-sized bread rounds (cut each slice into 4 quarters)
Arrange the pecans or shelled pecans in a baking dish and place the bread rounds with the filling side down on top of the pecans
Flip and arrange in a serving dish.
