Heat the olive oil in a large frying pan and caramelize the onion
Add the bell pepper, zucchini, meat, and coconut milk
Season with salt and pepper and let cook for five minutes
Gently whisk the eggs and add to the meat
Stir gently until cooked
Add the parsley, cilantro, and turn off heat
Serve immediately with rice.
