Prepare the dough: Combine butter and water in a saucepan and bring to a boil
Mix in the flour, stirring with a wooden spoon until it forms a ball
Remove from heat and mix in 1 egg at a time, stirring well with a wooden spoon
Fry the dough in hot oil until golden brown, adjusting the heat as needed
Leave the fritters to cook for a few minutes before removing them from the oil
Place on absorbent paper and serve with sugar and cinnamon
To bake the dough, follow the instructions for fried Carolinas and add 2 more eggs after removing the saucepan from the heat
Scoop the dough into small mounds on an unbuttered baking sheet, leaving a gap between each
Bake in a preheated oven at 200°C for 45 minutes or until golden brown and firm
Remove from oven and let cool before filling with sweet or savory fillings
