In a medium skillet, fry the onion in half of the butter over medium heat until lightly browned
Add the all-purpose flour and stir until lightly toasted
Add the white wine and whole milk and cook, stirring constantly, until a smooth sauce forms
Remove from heat, add the smoked trout fillet, mix well, and reserve
In another medium skillet, melt the remaining butter and cassava flour over high heat and stir until golden brown
Place the reserved sauce in ramekins (optional), sprinkle with toasted breadcrumbs, and serve immediately
