4 medium carrots

Peel the carrots and cut them into strips
Boil in salted water for 2 minutes
Drain
Add remaining ingredients, bring to a simmer, carefully turning the carrot strips to coat them completely
Simmer slowly, stirring occasionally for about 20 minutes, until the carrots are tender and well caramelized
Serve at 8 portions.
