Cook the carrot in boiling water until tender
In a small saucepan, mix together the sugar, cornstarch, ginger, and salt to taste
Add the orange juice and cook over medium heat, stirring constantly, until thickened and bubbly
Cook for an additional 1 minute and remove from heat
Add the butter or margarine and pour over warm carrots, stirring well
Garnish with salsa and a slice of orange
Serve 6 portions.
