Ladle the boiling water over the fresh mint leaves in a teapot, then stir gently to release the flavors
Add a little more boiling water and stir carefully with circular motions to remove any excess water and leave the mint leaves intact
Pour 800ml of boiling water into the teapot and add the caramel sugar
Gently massage the fresh mint leaves with your hand and place them in the teapot
With the help of a spoon, lower the mint leaves into the water and let them infuse for 3 minutes
Serve in cups or small bowls garnished with a sprig of mint.
