Separate the pork loin into portions
Place the pork in a baking dish and drizzle with oil
Bake in a preheated oven at 400°F for about 2 hours or until the meat is tender, adding water to the baking dish as needed
Transfer to a serving platter and serve with the sauce
For the sauce: In a pan, combine all the ingredients and cook over low heat with the pan covered, stirring occasionally, for about 40 minutes
Remove from heat, blend in a blender, and strain through a sieve
Heat again to warm, season with salt to taste, and serve
