Preparing Rabbit Meat

    The rabbit can be found frozen at markets and supermarkets. It's a lean meat that may come whole or in pieces. When the rabbit comes whole, it's necessary to remove the head and legs. Then, cut it in half lengthwise, and each half into four or five pieces. This is a lean meat with less cholesterol than other meats. It's also easy to digest and has an agreeable flavor.
