2 ripe pineapples, peeled and diced

Whisk the cream until slightly thickened, then add mayonnaise, ketchup, cognac, and diced pineapple
Mix well and refrigerate
Cook the shrimp in a steamer for 4 minutes
Let it cool slightly, then remove heads and shells
Cut into small pieces and refrigerate completely
Combine the prepared mixture with cream and season to taste
Place in 6 cocktail glasses and garnish with pineapple wedges.
