Choose the edamame beans well and wash them
Soak them in enough water to cover for a night
The next day, drain and cover with boiling hot water and salt to taste
Let it soak for 1 hour
Drain well and spread on a large baking sheet lined with paper, letting it air dry for about 2 hours
When dry, put the edamame in a preheated oven at moderate temperature and toast until golden brown
Remove from the oven and sprinkle with salt while still warm
Serve as an alternative to roasted peanuts, to accompany beer or batter.
