Season the chicken with salt and black pepper
Add the olive oil and mix well
Heat a frying pan over high heat; when hot, add half of the chicken pieces
Fry quickly, stirring constantly, for 4 minutes or until golden brown
Fry the remaining chicken pieces
Remove from heat and sprinkle with parsley
Prepare the dipping sauce: mix all ingredients
Bring to a simmer and cook for 10 minutes over low heat, stirring occasionally
Serve the chicken fritters with the dipping sauce on the side
