Place the Brussels sprouts in boiling water and cook for 7 minutes
Remove from water and place in a bowl with ice water
Drain
Using a knife, remove the inner part of each Brussels sprout (cut along the bottom). Reserve
Fry the slices of bacon until golden brown
Remove from heat and chop into small pieces
Mix with cheese and lemon juice
Adjust seasoning
Stuff each Brussels sprout with prepared cream
Chill in refrigerator
Serve cold
