3 tablespoons of unflavored gelatin
2 1/2 cups of water
2 cups of evaporated milk
4 separated eggs
1 1/2 cup of sugar
4 tablespoons of vanilla extract
2 tablespoons of rum
1 cup of whipped cream

Soak the gelatin in 1/2 cup of water
Heat the remaining water with evaporated milk until it forms bubbles around the pan
Beat the egg yolks with sugar and slowly add to the hot milk mixture
Cook in a double boiler for 3 minutes (over boiling water)
Remove from heat, add the softened gelatin, and mix until dissolved
Place the bowl in a larger pan filled with cold water or refrigerate
When the mixture starts to thicken, add vanilla extract and rum
Beat egg whites into snow and whipped cream into meringue
Add to the gelatin mixture
Mix well
Pour into a decorative mold and refrigerate until firm
Serve 10-12 pieces
Optional: decorate with whipped cream and chocolate shavings
