Dissolve the cornstarch in a little water

Boil the milk, then add the dissolved cornstarch, corn flour, egg yolks, sugar, cinnamon, and orange and lemon peels
Stir constantly until a creamy consistency is reached

Strain everything through a fine-mesh sieve and divide into six bowls

Refrigerate for at least three hours

Just before serving, sprinkle with sugar and caramelize it using a hot skillet over a gas flame
