Cut the avocados in half and remove the pits
Use a spoon to scoop out all the flesh, without damaging the skin
Blend with the lime juice in a liquidizer for 1 minute
Season with salt to taste (2 or 3 tablespoons of whipped cream for those who enjoy the subtle flavor of lime beneath), and blend for an additional 2 minutes
Serve chilled; within the avocado skin, if desired
Variations: substitute lime juice with Port wine, Madeira, or milk.
