1/3 cup dry white wine
1/4 cup passionfruit juice
2 tablespoons water
2 tablespoons honey
2 tablespoons lime juice
1 1/2 teaspoons cornstarch
1/2 teaspoon ground ginger
4 grams black peppercorns
4 medium-sized ripe pears, firm and with the stem
1 bay leaf

Peel the pears without removing the stem
Brush them with lime juice to prevent browning

In a refrigerator, combine honey, ground ginger, bay leaf, black peppercorns, wine, and passionfruit juice
Mix well
Add the pears and microwave on high for six minutes, replenishing the liquid halfway through or until the pears are tender
Remove and reserve in another container

Dissolve cornstarch in water and add to the passionfruit mixture
Mix well and microwave on high for an additional two minutes or until slightly thickened

Distribute the pears in individual serving dishes and drizzle with the compote
If desired, garnish with bay leaves and black peppercorns
Serve warm or at room temperature.
