Blend the sweet potato puree, orange juice, grated lime zest, and 1 tablespoon of lime juice in a processor or blender until smooth
Pour into a serving dish and reserve
Cook the apples in water until tender, but not mushy
Drain and add the remaining lime juice
Let it cool down
Combine with the sweet potato cream mixture
Refrigerate until serving time
Sprinkle with toasted almonds before serving
