1 fruit salad recipe
Foam
6 pears, peeled and diced
1/2 cup (ch) of sugar
1 tablespoon of butter
Cream
1 tablespoon of unflavored gelatin
3 tablespoons of water
1 cup of natural yogurt
1 cup of whipped cream, beaten to stiff peaks
1/4 cup (ch) of sugar
1 teaspoon of cardamom powder

Foam
Dice the pear into small pieces
Caramelize the sugar over low heat
Combine the pear and butter and mix until coated
Process in a blender and set aside
Cream
In a bowl, hydrate the gelatin in water for 5 minutes
Heat in a bain-marie until dissolved
Mix in the natural yogurt and whipped cream
Whisk with a spatula
Add sugar and cardamom powder and mix
Heat to serve in the refrigerator
Assembly
Just before serving, drain excess liquid from fruit salad
To assemble, alternate layers of fruit and cream
Dust with foam and serve.
