Peel the bananas and cut them in half lengthwise
Pit the bananas, sprinkle with powdered sugar, add a few drops of lime juice, some grated orange peel, and rum
Let it sit for an hour
Remove the banana mixture from the bowl and dip each piece into the light batter
Fry them in abundant oil until golden brown
Place the beignets on a plate lined with paper towels and dust with powdered sugar
As soon as they are golden, remove them from the oil
Prepare the batter: mix flour, beer, and salt to obtain a batter with the consistency of a light cream
Add oil and let it sit for an hour
Beat the egg white until fluffy and fold it into the batter mixture
Use immediately for frying
If desired, add one more tablespoon of rum at the end.
