Beat the eggs with sugar until they become fluffy
Heat the heavy cream, without boiling, and pour it over the eggs, beating well
Add the vanilla essence, mix well, and pour into buttered molds
Place in a moderate oven (170°) in a water bath for about 15 minutes, or until a knife inserted comes out clean
Remove from the oven and let it cool completely
