Preparation of the dough
Heat the oven to 180°C
Beat the butter with the sugar until light and fluffy
Add the eggs, beating constantly until smooth and creamy
Add the flour and vanilla extract and mix well until homogeneous
Preparation of the filling
Beat the confectioner's sugar with the butter, vanilla extract, and eggs until light and fluffy
Add the melted chocolate and coffee and beat until smooth and creamy
Chill for 15 minutes or until slightly firm
On a plate, stack layers of dough and filling, reserving one layer of dough for decoration
Reserve some whipped cream
Layer 1
Spread a thin layer of dough on the bottom of a buttered and floured ring mold and bake in the oven for about 10 to 15 minutes or until the edges are lightly golden and the center is firm when touched
Layer 2
Remove the molded dough from the plate and let it cool
Repeat the operation until all the dough is used (this recipe yields about seven layers of dough that can be stacked to form the cake)
Layer 3
To decorate, melt the sugar over low heat and add water
When you get a golden caramel, spread it immediately on the reserved layer of dough
Mark the caramel with a knife as if cutting the disk into slices
Let cool, place the decorated disk on top of the other layers intercalated and filled with chocolate, and let chill for three hours.
