Pit the pineapple, slice it into wedges and remove the core
Cut the wedges in half and reserve
In a large saucepan, heat the sugar over high heat, stirring occasionally, until it turns golden brown
Reduce the heat and gradually add the water, stirring constantly, until the syrup thickens
Add the pineapple and increase the heat
When boiling, reduce the heat, cover the saucepan, and cook for 20 minutes
Add the cherries, stir well, and remove from the heat
Let it cool and serve at room temperature
