In a large saucepan, cook the pumpkin with the water over high heat, stirring occasionally with a wooden spoon, until the pumpkin breaks down and the liquid evaporates (approximately 35 minutes)
Add the sugar and cook, stirring constantly, until the liquid evaporates (approximately 25 minutes)
Add the grated coconut, mix well, and cook until the pudding separates from the bottom of the saucepan and becomes creamy and shiny (approximately 5 minutes)
Transfer to a serving dish, let it cool, and serve
