Peel the watermelon and cut it into cubes of 2.5 cm
Remove the seeds (some may remain)
In a large saucepan, bring the sugar to a boil over high heat, stirring occasionally until it turns caramel-like
Reduce the heat, add the water gradually and stir until dissolved
Add the watermelon, cinnamon, and remaining water
Increase the heat and cook for 30 minutes
Add the hydrated gelatin and mix until dissolved
Remove from heat
Let cool and serve at room temperature or store in a refrigerator with a sealed container until serving time
