rind and juice of 1 lemon

Soak the gelatin in cold water
Mix the sugar and hot water, and bring to a boil
Add the softened gelatin and cook slowly for about 20 minutes
Add the fruit juice and rinds
Pour into a mold, which should be large enough for the dessert to be about 2 cm high
Refrigerate until firm
Unmold and cut into desired shapes
Dust with powdered sugar if desired.
