For the dough: "4 cups of wheat flour"

Prepare the dough ahead of time
In a bowl, combine the flour, make a depression in the center and add the lard, egg, and salted brine
Mix with your fingertips and then knead on a floured surface until you get a manageable dough
Wrap the dough in aluminum foil and refrigerate for at least one day
Prepare the sauce: melt the pork lard in a pan and sauté the remaining ingredients
Roll out the dough and line small terra cotta pots or glass cups with 1/2 cup capacity, greased with butter
Add the filling, a little of each ingredient, drizzle with some sauce, and cover with another piece of dough, finishing the edges
Brush with egg wash seasoned with a bit of salt
Bake in a hot oven (200°F) for about 40 minutes or until the dough is golden brown
Unmold and, if desired, place on a bed of lettuce
This dish can be served with white rice
Note: If using terra cotta pots for the first time, grease them with oil and bake in a hot oven (200°F) for about 10 minutes
Remove the oil with a paper towel and follow the recipe.
