1 slice of braised beef (approximately 700g)
1 small French breakfast ham
3 medium-sized garlic cloves, mashed
to taste salt
4 tablespoons of chopped parsley
3 slices of cooked lean prosciutto
1 egg
2 tablespoons of olive oil
1 and 1/2 teaspoons of butter or margarine
4 tomato halves, without skin and seeds
1 medium-sized onion, finely chopped
1 cup of beef broth
1 tablespoon of wheat flour
to taste salt and black pepper

1 tablespoon of wheat flour
to taste salt and black pepper
Remove the ham rind (if desired, use a grater to remove the rind)
Soak in a little water and reserve
Mix the garlic with a pinch of salt and parsley until you get a paste
Beat well and spread a bit of the garlic paste over the entire surface
Cover with slices of prosciutto
Mix the remaining garlic paste with the ham, drained and crumbled, and chopped into small pieces
Add the egg and mix well
Spread it over the prosciutto
Roll up the meat and tie with kitchen twine or close with toothpicks
Heat the olive oil and butter or margarine in a pressure cooker
Fry the meat roll on all sides
Add the chopped tomatoes, onion, and fry for a few more minutes
Add the beef broth
Cover and let it cook for 25 minutes, starting from when the liquid starts to boil
Remove the meat from the pan, mix the flour with a little water and add it to the sauce in the pan
Cook while stirring for a few more minutes and adjust the seasoning
To serve, cut into slices and serve with the sauce
