5 slices of white pear (pear form)

1 cup grated cheese
1/2 cup pitted and sliced olives
1/2 teaspoon mustard

2 cups scalded milk

Remove the pear's skins
Use 1 tablespoon of butter to spread over the pear
Cut it into small squares
Layer one-third of the pear in a greased and floured baking dish
Top with 1/3 cup grated cheese and half the olives
Repeat the layers, finishing with cheese
Place the remaining butter in small pieces on top
Beat the eggs lightly and add mustard and olive liquid
Add the warm milk gradually, stirring always
Pour into the prepared baking dish
Bake in a slow oven or water bath for about 1 hour or until firm
Serve 4 to 6 portions.
