In a bowl, whisk together the egg yolks and lemon juice; set aside

In a large skillet, cook the bacon over low heat until it's golden brown; remove from heat and set aside

Add the beef to the same skillet and cook for 5 minutes; set aside

Add the beef broth, white wine, black pepper, reserved egg yolks, and nutmeg to the skillet
Simmer, covered, over medium heat for 20 minutes or until the beef is tender
Add the reserved bacon and chopped onion; stir well and serve immediately.
