Put the bacon in a pan and heat it over medium-low; when it starts to melt, add the chopped onions; when they're caramelized, add the rice and cook for 3 minutes
Add the broth and shredded chicken; season with salt, garlic, and pepper to taste; cover the pan and simmer for about 15 minutes (until the rice is cooked and creamy)
Reduce the heat and let it simmer for another five minutes to allow the liquid to reduce
