In a fondue pot, heat the oil over high heat
Place it on a warming tray in the center of the table
Each person spears a cube of meat with their fork, dips it into the hot oil and lets it fry to the desired point
Then, they remove the meat from the fork, placing it on the plate and wrapping it in one of the sauces served with the fondue (see recipes in the chapter Sauces)
