One pork chop, approximately 2.5 kg
3 cloves of garlic, minced
1 tablespoon of thyme
2 tablespoons of pepper sauce
2 tablespoons of salt
1/2 cup of wheat flour
2 tablespoons of olive oil
2 tablespoons of butter
1 liter of milk
2 bay leaves
One pork chop, approximately 2.5 kg

Preheat the oven to 350°F
Season the pork chops with garlic, thyme, pepper sauce, and salt
Coat the pork chops in wheat flour
Heat the olive oil and butter in a skillet that can go into the oven
Add the pork chops and ensure they are coated in the fat
Reduce heat and fry until golden brown on all sides
Remove excess fat from the pan and add milk and bay leaves
Cover the skillet (leaving a small opening) and place it in the oven for 1 hour
Increase temperature to 425°F
and remove the lid
Continue cooking for an additional 15 minutes, or until the meat is tender
Remove the skillet from the oven and reduce heat to low
Simmer for 30 minutes, or until the sauce has reduced by half
Remove the pork chops and let the sauce cool slightly
Use a spoon to remove excess fat that has formed on the surface
Blend the sauce in a blender until smooth
Heat and serve with sliced pork chops
Serve 20 portions.
