Having cleaned the meat well, cut it into regular pieces, according to the type of skewer
Pour a tablespoon of lemon juice over the pieces, add half a cup of wine, and let it sit for at least 30 minutes in that marinade
Skewer them onto wooden sticks or skewers in the following order: rim, bacon, tomato, scallion (or mushroom)
Fry in hot oil, turning each piece from one side to the other
Dust with salt and pepper and serve very hot
Use the wine for the sauce
Add water to complete a cup, season with salt and pepper, and thicken with half a tablespoon of flour.
