Dissolve the gelatin in cold water and warm it over low heat, whisking constantly until dissolved
Let cool. Reserve
Milk and ice-cold water in a blender until foamy
Add the dietetic dessert packet and blend until thickened. Reserve
Add the gelatin to the mixture and blend until combined. Reserve
Whisk the egg whites in a separate bowl until stiff peaks form, then slowly fold them into the reserved foam mixture
Pour into serving dishes and refrigerate until firm.
