Preheat the oven to low temperature (120°C)
Grind the walnuts and mix with confectioner's sugar
Mix the yolk with 2 tablespoons of lemon juice and add this mixture to the walnuts
Place this mass on a smooth surface and roll it into a cylinder about 65cm long
Gently roll the cylinder to obtain 2.5cm height and 7.5cm width
Beat the white, sugar, and a few drops of lemon juice until stiff peaks form
Spread over the mass
Pass a knife in flour before cutting the mass into slices 2.5cm thick
Place the slices on an unbuttered baking sheet coated with confectioner's sugar
Put in the oven to dry, for about 10 or 15 minutes
The topping should remain white.
