Reduce the heat and simmer for 40 minutes
Remove from heat and let cool
In a pan with oil, sauté the onion and garlic until they start to brown
Add the tomatoes and simmer at high heat
Reduce the heat, cover, and cook for 15 minutes
Pour this mixture into the pressure cooker with the beans, let it warm up, and add the cheese
