Season the filet mignon with salt and pepper
In a low-heat skillet, melt the butter and cook the onion until caramelized
Add the filet mignon, increase heat, and sear on all sides until desired doneness
Slowly add a little water, scraping the bottom of the pan well
Add heavy cream mixed with lime juice
Remove from heat and keep warm
Fry the carrots in hot oil, in batches, and drain on paper towels
Serve with the filet mignon warmed, sliced into portions
