In a large skillet, sauté the onion in olive oil until it's soft
Add the tomatoes and cook for about 2 minutes, stirring constantly
Add the shrimp, cooking for an additional 3 minutes
Add the rice and cook for another 3 minutes, stirring occasionally
Add the water
Season to taste
When it starts to boil, cover the skillet and reduce heat
Cook for about 15 minutes until the liquid has evaporated and the rice is cooked and fluffy
Serve hot, portioned into 6 servings
